This is the only pizza recipe you’ll ever need
With this super simple recipe in your repertoire you’ll never feel like eating overpriced home delivery pizza. The key to this delicious pizza is a crust that you make yourself and fresh tomato sauce. It’s that simple. Do not be daunted by cooking with yeast. Once you perfect this basic pizza bread, there’s lots you can do with it. So here goes:
For the pizza crust:
Ingredients
2 cups plain flour
Pinch of salt
1 and ½ tsps instant dried yeast
2 tbsp olive oil
Water to mix

Method:
Put the flour, salt and yeast into a large, roomy bowl. Pour in the olive oil and add water a little at a time to make a soft dough.
Knead for about 10 minutes, till the dough is smooth and elastic.
Cover with a damp cloth and leave to rise for about an hour.
For the tomato sauce
Ingredients
750 gm ripe, red tomatoes, peeled, deseeded and roughly chopped
3-4 cloves garlic,chopped
2 tbsp olive oil
Pinch of chilli flakes
Salt to taste
A few sprigs of fresh basil

Method
Heat the oil in a saucepan and put in the garlic.
Quickly add the prepared tomatoes, the salt and chilli.
Let the sauce simmer away till the tomatoes are reduced to a pulp. Add the basil leaves and take off the heat.
To assemble the pizza
Preheat the oven to 300 deg C, or the highest setting in your oven.
Lightly grease a pizza pan. Knock down the risen pizza dough, take a ball the size of large orange and press it down on the pan, spreading out till you have a thin disc.
Spread the tomato sauce over the pizza base, top with slices of pizza cheese such as mozzarella and bake for 10-12 mins, till the pizza crust is golden at the edges.

Note: I find that Amul’s pizza cheese is a good choice, and it isn’t frightfully expensive either. This is a basic pizza topping. You can add whatever else you fancy. When using veggies like mushrooms, capsicum and onions, sauté them lightly in olive oil before adding to your pizza.
Use the pizza base:
-This pizza dough can be used to make focaccia. Just press the dough to a thickness of about an inch into a square tin. Make some depressions on the surface, scatter with coarse salt, herbs such as rosemary and drizzle with olive oil. Bake till risen and golden.
– The dough can also be turned into bread sticks. Roll into thin sticks, scatter with poppy seeds or coarse salt and bake till crisp.
