Seven scrumptious and simple things you can do with mangoes
Summer is the season for the king of fruits. Eaten your fill of Alphonso, Raspuri and Benganapalli? Then transform them into drinks, snacks, salads and desserts. We tell you how:
1. Make mango lassi
Put a peeled and chopped ripe mango into a blender. Add 2 cups of yogurt and some ice cubes. Give it a good whizz and serve. You won’t need to add sugar if the mango is sweet enough. Add a pinch of cardamom powder if you like the fragrance.
2. Serve it as salsa
Peel and finely chop a ripe, but firm mango. Place it in a bowl and toss with torn basil leaves, lemon juice, salt and chopped green chillies. Set aside for an hour for the flavours to develop. Serve with tortilla chips or as a sauce for grilled fish or chicken.
3. Cook up a Kerala curry
Cut one ripe, firm mango into large pieces. Grind a tbsp of grated coconut with a green chilli and a pinch of cumin. Stir the paste into a cup of beaten yogurt. Add salt and turmeric to taste. Bring the curd mixture to a boil and slip in the mango pieces. Turn off the heat. Season the curry with mustard, red chillies and curry leaves fried in a tsp of coconut oil.
4. Do dessert
For an easy dessert, make up some custard, following the instructions on the packet. Allow to chill. To serve, place some ripe mango cubes in dessert bowls and pour the custard over. Top with some cream if you like.
5. Juice it
Run ripe mango through the blender and serve with ice. Add a dash of lime juice for a zesty finish.
6. Shake it up
Make mango juice and spike it with a shot of vodka. Add some lime juice and ice and blend in a cocktail shaker. Serve in a martini glass. Try it with a green chilli for a bit of bite.
7. Flavour a cake
Add a chopped mango to your cupcake or muffin batter for a moist, fruity bake.
